Ingredients:

3 ripe bananas, mashed

30g coconut oil, melted

1 tsp apple cider vinegar

80ml plant milk

90g buckwheat flour

50g ground oats

50g ground nuts (we used almonds)

2 tsp baking powder

1 tsp salt

1 tsp cinnamon powder

20g Protein+ Vanilla Ice Cream

A handful of crushed dark chocolate

 

Instructions:

1. Preheat & Prepare – Set your oven to 180°C (350°F) and line a loaf pan with parchment paper or lightly grease it.

2. Mix the Wet Ingredients – In a large bowl, mash the bananas until smooth. Stir in the melted coconut oil, apple cider vinegar, and plant milk.

3. Combine the Dry Ingredients – In a separate bowl, mix the buckwheat flour, ground oats, ground nuts, baking powder, salt, cinnamon, and Protein+ Vanilla Ice Cream powder.

4. Bring It Together – Gradually fold the dry ingredients into the wet mixture, stirring gently until well combined.

5. Add Chocolate & Bake – Fold in the crushed dark chocolate, pour the batter into the prepared loaf pan, and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool & Enjoy – Let the banana bread cool slightly before slicing. For the ultimate treat, serve warm with a drizzle of peanut or almond butter.
