If you’re looking for a healthy treat that satisfies your sweet tooth and supports your fitness goals, these Vegan High-Protein Cookie Dough Bars are a game changer. They’re easy to make, deliciously gooey, and full of good-for-you ingredients like chickpeas, nut butter, and plant-based protein. Perfect as a post-workout snack, breakfast-on-the-go, or guilt-free dessert.

Ingredients

  • 400g cooked chickpeas (drained and rinsed)

  • 40g vanilla Protein+

  • 100g peanut butter or almond butter

  • 2 tbsp sweetener of your choice (we love erythritol for a low-calorie option)

  • 1 tbsp baking powder

  • Pinch of salt

  • 240ml unsweetened almond milk

  • A handful of dark chocolate chips for topping

Instructions

  1. Preheat your oven to 200°C (390°F).

  2. Add all ingredients except chocolate chips to a food processor. Blend until you get a smooth, thick batter.

  3. Pour the batter into a lined or lightly greased baking tray.

  4. Sprinkle the dark chocolate chips evenly on top.

  5. Bake for 30 minutes, or until golden on the edges and firm in the center.

  6. Let cool slightly before slicing into bars.

Why You’ll Love It

  • High in plant protein thanks to chickpeas and protein powder

  • Naturally gluten-free and dairy-free

  • No refined sugar (if you choose a low-cal sweetener)

  • Meal prep-friendly: make a batch and keep in the fridge for up to 5 days

  • Tastes just like cookie dough, only better for you

Tip:

Want them extra indulgent? Stir some chocolate chips into the batter too—no judgment here.
