Who says ice cream bars can’t be good for you? These healthy Snickers-style bars are creamy, crunchy, salty-sweet and totally packed with plant-based protein. The best part? No fancy equipment needed and just a few real-food ingredients.

Perfect as a cool summer treat or post-workout snack.

 

Base Layer:

  • 30g almond or oat flour

  • 200g plant-based yogurt

  • 1 scoop vanilla protein+

  • 2 tbsp peanut butter

 

Caramel Layer:

  • 16 soft dates

  • 2 tbsp peanut butter

  • 15ml almond milk

  • Pinch of salt

 

 

Topping:

  • Dark chocolate, melted

  • 1 tsp coconut oil

  • Crushed peanuts

  • Sea salt flakes

 

 

Instructions

  1. Mix the base: Combine flour, yogurt, protein+, and peanut butter until smooth. Pour into a tray or small container.

  2. Freeze: Let it set while you prep the next layer (about 30–60 minutes).

  3. Make the caramel: Blend dates, peanut butter, almond milk, and salt until creamy. Spread it evenly on top of the frozen base.

  4. Freeze again: Let it firm up for at least 2 hours or overnight.

  5. Slice: Cut into bars or squares.

  6. Coat: Melt dark chocolate with coconut oil. Dip or drizzle over the bars, then top with peanuts and a sprinkle of sea salt.

  7. Enjoy: Store in the freezer and let thaw for 2–3 minutes before eating.
