Soft, fluffy and full of warm autumn flavours, these Pumpkin Protein Pancakes are an easy fall breakfast that still gives you a solid protein boost.

Pumpkin purée keeps the pancakes moist, while cinnamon, ginger and nutmeg give them that classic pumpkin-spice flavour. Paired with our Protein+ Vanilla Ice Cream, they’re perfect for slow weekend mornings or an easy post-workout breakfast.

Ingredients for around 4 pancakes

  • 80g oats
  • 1 scoop Protein+ Vanilla Ice Cream
  • 100g pumpkin purée
  • 2 eggs or 2 flax eggs
  • 60–80 ml almond milk or oat milk
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • 1 small pinch of sea salt
  • 1–1½ tsp pumpkin spice
    or
  • 1 tsp cinnamon + ¼ tsp ground ginger + ¼ tsp nutmeg

For frying

  • A small amount of butter or coconut oil

For topping

  • greek-style or coconut yoghurt
  • a drizzle of raw honey
  • cinnamon
  • optional: chopped pecans or walnuts

Preparation

  1. Add the oats to a blender and blend until you have a fine oat flour.
  2. Add the protein, pumpkin purée, eggs, milk, baking powder, cinnamon, ginger, nutmeg, vanilla and sea salt.
  3. Blend briefly until smooth. Avoid blending for too long once everything is combined.
  4. Let the batter rest for 2–3 minutes so the oats and protein powder can absorb some of the liquid.
  5. Heat a non-stick pan over medium heat and add a little butter or coconut oil.
  6. Spoon small portions of batter into the pan and cook for around 2–3 minutes, until bubbles start to form and the edges look set.
  7. Flip and cook for another 1–2 minutes until lightly golden.
  8. Stack the pancakes and finish with yoghurt, raw honey, chopped nuts and a little cinnamon.

Vegan Version

To make the pancakes vegan, replace the 2 eggs with 2 flax eggs:

  • 2 tbsp ground flax seeds
  • 5–6 tbsp water

Mix the flax seeds and water and let the mixture sit for about 5–10 minutes until it thickens, then use it in the batter in place of the eggs.

Make It Your Own

For an even more autumnal version, you can also add:

  • dark chocolate chips
  • warm apple slices on top
  • a spoonful of almond butter
  • a little extra pumpkin spice
